Ingredients You’ll Need

  • 150 grams penne pasta 1.5 cups or us 6 100 grams pasta for more saucy pasta
  • 2 tablespoons butter divided
  • 1 small red onion diced or chopped
  • 1 medium red pepper sliced
  • 1/2 cup sweet corn frozen, I add this to hot water for 10 minutes before using in the recipe
  • 3/4 cup broccoli florets optional, small florets
  • 1 tablespoon olive oil
  • 4-5 large garlic cloves finely chopped
  • 1.5 tablespoon all purpose flour also known as maida
  • 2 cups milk room temperature, I used whole milk

  • 1/4 cup heavy cream optional, you can also use just use milk, cream makes it more creamier
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red chili flakes
  • salt to taste, around 1/2 teaspoon
  • black pepper to taste
  • 1/4 cup grated cheese optional, you can use mozzarella or cheddar, cheese makes it richer
For The white souce : 

  • 2 tablespoons butter
  • 1½ tablespoons all-purpose flour (maida)
  • 1½ cups milk (preferably warm)
  • ¼ teaspoon black pepper powder
  • ½ teaspoon chili flakes
  • ½ teaspoon mixed herbs or oregano
  • Salt to taste
  • ¼ cup grated cheese (mozzarella or                             processed cheese)

For Vegetables (optional):

  • ¼ cup chopped capsicum (green, yellow, red)
  • ¼ cup sweet corn
  • ¼ cup carrot or mushroom slices
  • 1 tablespoon olive oil

Step-by-Step Method

 1: Boil the Pasta

1. In a large pan, bring 4 cups of water to a boil.

2. Add salt and 1 teaspoon of oil.
3. Add pasta and cook until soft but firm (al dente).

4. Drain the water and rinse with cold water to stop further cooking. Keep it aside.

Step 2: Prepare the Vegetables

1. Heat 1 tablespoon olive oil in a pan.

2. Add chopped vegetables and sauté for
 2–3 minutes.

3. Don’t overcook; keep them slightly crunchy. Remove and keep aside.

Step 3: Make the White Sauce

1. In another pan, melt 2 tablespoons butter on low flame.


2. Add 1½ tablespoons flour and mix continuously for 1 minute — it should not turn brown.


3. Slowly pour warm milk while stirring constantly to avoid lumps.

4. Keep stirring until the sauce thickens and coats the spoon.


5. Add salt, black pepper, chili flakes, oregano, and mix herbs.


6. Add cheese and stir until melted and creamy.

Step 4: Combine Pasta and Sauce

1. Add boiled pasta and sautéed vegetables into the sauce.


2. Mix gently so the sauce coats the pasta evenly.


3. If sauce is too thick, add a few spoons of milk to adjust consistency.


4. Taste and adjust seasoning as needed.
