1 kg chicken, cut into medium pieces


1 cup thick yogurt

2 tsp red chili powder

1 tsp garam masala powder


1 tbsp lemon juice


Salt to taste



For the rice:


2 cups basmati rice


4 cups water


3-4 cloves


2-3 green cardamoms


1-2 bay leaves


1 cinnamon stick


Salt to taste



For layering and cooking:


2 large onions, thinly sliced


1/2 cup chopped coriander leaves


1/2 cup mint leaves


2 tbsp ghee or clarified butter


A few saffron strands soaked in 1/4 cup warm milk


2 tbsp oil



Step-by-Step Preparation


1. Marinate the Chicken


Start by cleaning and washing the chicken pieces thoroughly. In a large bowl, add yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, and salt. Mix well to form a smooth marinade. Add the chicken pieces and coat them well. Cover the bowl and let it marinate for at least 2 hours, preferably overnight in the refrigerator for maximum flavor.


2. Prepare the Rice


Rinse the basmati rice in water until it runs clear to remove excess starch. Soak it for about 30 minutes. Boil water in a large pot, add salt, cloves, cardamoms, bay leaves, and cinnamon. Once the water starts boiling, add the soaked rice. Cook until the rice is about 70% done (it should still have a slight bite). Drain the rice and set it aside.


3. Fry the Onions


In a large, heavy-bottomed pan, heat oil and fry the sliced onions until they turn golden brown and crisp. Remove half of the fried onions and set them aside for garnishing. The rest will be used to cook the chicken.


4. Cook the Chicken


In the same pan with the remaining onions, add the marinated chicken. Cook on medium heat until the chicken is almost cooked through and the oil starts to separate. Stir occasionally to prevent burning and ensure even cooking.


5. Layering the Biryani


Reduce the heat to low. Spread a layer of cooked rice over the chicken evenly. Top it with chopped mint and coriander leaves, fried onions, and saffron milk. Repeat the layers if necessary, finishing with a rice layer on top.


6. Dum Cooking


Drizzle ghee over the final layer. Cover the pan with a tight-fitting lid to prevent steam from escaping. You can also seal the edges with dough (called "dum") for an authentic touch. Cook on a very low flame for 20–25 minutes. Alternatively, you can place a heavy object over the lid to keep it tightly closed.


7. Serve


After 20–25 minutes, turn off the heat and let the biryani rest for another 10 minutes before opening the lid. This allows all the flavors to settle and blend beautifully. Gently fluff up the rice using a fork, being careful not to break the grains.


Serve hot with raita (yogurt mixed with cucumber and spices), salad, or a spicy gravy of your choice.

Use long-grain basmati rice for the best texture and aroma.


Marinating the chicken overnight makes it more tender and flavorful.
