  • Chicken :Boneless, skinless chicken breasts. I will fight anyone who says you can't make fried chicken with breast. Some of your favorite fried chicken is made with chicken breast. Just look at Howlin' Ray's "The Sando", Shake Shack's Chicken Shack and even the famous Hattie B's.

  • Flour All-purpose flour for the dredging.
  • Seasoning: A mix of spices to flavor the chicken. This is where you can go absolutely crazy ๐Ÿ™‚
  • Buns: Brioche buns are elite but we'll keep things simple with regular buns. You pick.
  • Toppings: Lettuce, cheese, and mayonnaise. You can customize this in a number of ways. I add slaw and hot peppers for some crunch and heat.
Why This Fried Chicken Burger Is the Best
This fried chicken burger is everything you want from a crispy chicken sandwich: crunchy on the outside, juicy on the inside, and packed with flavor. It's inspired by the KFC Zinger Burger that I've literally grown up eating as a child because the nearest KFC was 3 mins from my house!

How to make the best Fried Chicken
If your chicken breast is too thick, slice it down to keep it about ½ inch thick. Season your chicken with the spices listed. This will be a drier spice rub. Let the chicken marinate for at least 15-20 mins.
2. Prepare the Dredging Station
In one bowl, add your all-purpose flour. In another bowl, add Cold water (throw in some ice cubes in there). Dredge the marinated chicken in the flour first really well for about 15 seconds, then dunk it in the cold water for 5 seconds, then finally press it into the flour for the second time. This is where you need to Coat the chicken thoroughly by pressing and rotating it in the flour for at least 60 seconds—this step is key for achieving that perfect crunch. The flour coating should develop crumbs and crannies.
3. Fry the Chicken
Heat oil in a pan to medium-high heat between 350-375F. Fry the  chicken breast for 2 mins per side until beautifully golden brown. Chicken breast cooks VERY quickly if your pieces are thinly sliced, so be careful not to overcook them otherwise they can dry out. If using thighs, you need to cook this longer (I would go for 7-10 minutes depending on the thickness).
4. Rest the Chicken
Once fried, rest the chicken on a grill and not a paper towel. Paper towel tends to make anything crispy a bit soggy.
5. Assemble the Burger
To make the best fried chicken imaginable, lightly toast your buns and spread some mayonnaise (chipotle or herb mayo is fire!), followed by a leafy romaine lettuce, the fried chicken and cheese. I also add some sliced cabbage for crunch and fresno pepper or pepperoncini for a kick.
Is buttermilk needed for southern fried chicken
While many Southern fried chicken recipes do use buttermilk to marinate the chicken, I'm skipping that step because my chicken comes out absolutely moist and tender, plus it saves so much time.
Tip to get the chicken CRISPY with the classic KFC Zinger crumb texture
  • Cut of chicken: While this recipe calls for chicken breast, you can substitute thighs if preferred. However, note that chicken breast results in a less chewy, more tender bite after frying.
  • Flour Coating: Pressing the chicken into the flour and making sure it’s FULLY coated is crucial for getting that crispy exterior. Seriously, the crumbs should look jagged and almost forced when you're done coating.
  • Frying Temperature: Maintain a medium-high heat for the oil. If the temperature is too high, the chicken may burn before cooking through. If it’s too low, the coating may get soggy and the chicken will look and taste oily.

INGREDIENTS 
  • 1 chicken breast
  • Seasoning
  • ¾ teaspoon red chili powder increase to 1 teaspoon if you like really hot chicken
  • ¾ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder optional
  • ½ tsp paprika
  • ½ teaspoon mustard powder optional
  • ½ teaspoon black pepper
  • Coating
  • all-purpose flour
  • ice-cold water
INSTRUCTIONS
  1. Rinse and pat the chicken dry before dividing it into three pieces, keeping them ½ inch in thickness
  2. Add the seasoning to the chicken and massage really well. Let the chicken marinate for a couple hours if possible, but at least 20 minutes.
  3.  To coat the chicken, add a cup or more of flour in a large bowl and coat the chicken really well for about 15 seconds.
  4. Next dunk the chicken pieces in ice water (or just really cold water) for 3 seconds and then dip back into the flour for the final coating. Really work in the flour in a rotating motion for at least 60 seconds and up to 2 minutes. You will begin to see crumbs form on the chicken.
  5. Fry the chicken pieces in medium high heat for only 3-5 minutes depending on the thickness of the piece. For ½ inch pieces, 4 minutes is max. Don't overcook because chicken breast will dry out.
  6. To assemble the Zinger burger, toast buns and smear both sides with some herb mayo (or any mayo). Lay lettuce leaves on one side and place the fried chicken piece. Top with sliced cabbage (sprinkled with lemon juice), some jalapeno/fresno peppers and more herb mayo.
  7. Enjoy this classic crispy Zinger burger with some French fries!
NOTES
  • DO NOT overcook because chicken breast has a very short cooking window.
  • Plain flour is all you need for coating because there is plenty of spice in the chicken. However, you can season the flour if you want.
  • If you don't see crumbs form after the final coat at all, you can dip it again in water and repeat. I have not done this because two coats are all I need.

Crispy Fried Chicken is a much-celebrated recipe of mine and so I thought it would be ideal for my 300th post. Grateful to God Almighty for all His blessings. It is so overwhelming, and I can’t express how happy I am about my site and my growing collection! I will take this opportunity to say “Thank you” from my heart to all my readers, viewers, those who take time to comment and those who try out my recipes and message me. Everyone loves Fried Chicken with the super crispy coating, the unique seasoning and I am sure I am not the only mother trying to make it at home. I tried various spice mix combinations to perfect my KFC style Crispy Fried Chicken recipe and this one here is the best fried chicken at home with the irresistible crust and juiciest chicken. Corn Flour :                                           1 ½ cups
Rice Powder :                                             ¼ cup
Onion powder :                                           2 tsp

Baking Soda :                                               2 tsp

Step by step method for Fried Chicken:

1. Wash and clean the chicken pieces, drain          2. and pat dry.
3.With a fork, prick the chicken pieces all over.
  1. Mix the curd and water to make buttermilk.
  2. Add Ginger garlic paste and mix well.
  3. Beat the eggs and add to the marinade.
  4. Next, add all spice powders and salt for marination and mix well.
  5. Marinate the chicken with this mix and refrigerate overnight or at least for 4 hours. Overnight marination is recommended for better results.
    Keep the chicken at room temperature 2 hours before frying.
  6. Put all ingredients for coating in a bowl or container. Close with lid and shake well to combine.
  7. Drain and dip the chicken piece in the seasoned flour mix to coat all sides very nicely.
    Heat oil (160oC – 170oC) in a pan.
  8. Coat the chicken again if necessary and gently put into oil.
  9. Do not overcrowd the pan or the temperature will drop resulting in greasy chicken.
  10. Deep fry the chicken until golden brown.
    Drain to a plate lined with tissue.
  11. Serve the Crispy Fried chicken with coleslaw, Tomato ketchup and French fries.

    1. Mix the Mayonnaise, curd, sugar and salt well.
    2. Add this to the chopped Cabbage and carrot and combine well.

i have been getting a lot of requests to make easy and simple thali recipes. as matter of fact, i haven’t posted many thali recipes in my blog, except south indian which was very long ago. most of the requests i have been getting are to reuse the utensils or reuse a base so that it is economical and thrifty. in this recipe, i have shown how to reuse a cooker to cook, rice, toor dal and even potatoes for a quick turnaround. in addition, i have reused the gravy base for paneer burji and dal tadka which makes it quick and easy. well, you may need not follow the same way and make it separately, but this hack saves a lot of time. especially when there are surprised guests at your home and you need something like yesterday, this thali recipe is a perfect choice.
furthermore, i would like to add some more tips, suggestions and variations to north indian thali recipe. firstly, in this recipe, i have shown instant pot electric cooker which has sufficient length to accommodate, dal, rice and also potatoes. but, it is not necessary to use it, and you may use a large pressure cooker for the same reason. secondly, i have prepared toor dal based dal tadka and i feel it is the best combo for jeera rice. you can mix and match with other lentils like channa dal, moong dal with other rice options like ghee rice, matar pulao. lastly, for an effective thali recipe, try to minimise the use of utensils and reuse the curry base. it not only saves your time but also gives you immense satisfaction.

a simple and tasty dry sabzi recipe prepared in just 2 minutes. the flavour of cumin will make the sabzi lip-smacking. it is usually consumed with phulka, however, can also be eaten as a bite. this is a no onion and no garlic sabji recipe, so can be served during fasting. i have used boiled potatoes to prepare aloo jeera recipe. alternatively, you can add little water and cook potato along with jeera tempering.
paneer bhurji gravy recipe:
crumbled paneer is cooked in tomato and onion based sauce. it is commonly served with roti, pav or bread. the gravy can be prepared with butter for rich flavour. i have used very fewer spices to keep the curry simple and tasty. however, you can add spices like pav bhaji masala to get the street flavour. this is the vegetarian alternative for popular egg bhurji recipe.
dal tadka recipe
a simple, tasty lentil-based curry recipe made with toor dal and aromatic spices. in addition, the ghee tempering will enhance the flavour of dal. it is indeed one of the staple food of many north indians. any north indian thali is incomplete without a spicy and tasty tempered dal dish. in this dal variation, i have prepared slightly watery consistency. however, you can prepare the dal in thicker consistency if you are looking to serve with roti

raita recipes are very popular in indian cuisine. it is considered as one of the best combinations for pulao and biryani. today i am sharing boondi raita as it is very easy to prepare and completes the thali. i have kept it very simple, however, you can add spices to the curd and also adjust the consistency of raita accordingly.
mango pickle:
pickle recipes are one of the most common condiments used across india. it is generally served in thali as taste enhancer, but can also be served as one of the main side dish. in this thali i have used mango pickle, which is made with mustard oil, raw tender mangoes and unique blend of spice. personal tip on the usage of pickle is to use it when you focus your attention to jeera rice and dal tadka combo. you may very well use it with roti or phulka too.
jeera rice recipe:
one of the flavoured rice prepared with basmati rice, cumin and ghee. it is typically served with dal and curries. the rice tastes great when prepared with good quality basmati rice. i have cooked the rice in the pressure cooker, add all the spices. however, you temper with cumin seeds with leftover rice.
phulka or roti:
north indian's meal is always a combination of flavoured long-grained rice and traditional wheat or plain flour-based indian flatbread. most commonly, wheat is used for day to day breads, but for any particular occasion, you can use maida flour too. in this recipe, i have particularly shared phulka or puffed roti, as it helps to balance the meal. it is lite, and can easily be served with any choice of curries. personally i feel, phulka with paneer burji and aloo jeera is one tasty combination for any choice of meal.

Remember you can freeze cheese if you won’t use it all.

Variations

The classic Margherita Pizza is made with an olive oil base, sliced tomatoes, and fresh mozzarella topped with fresh basil after baking. While technically a cheese pizza, it’s not quite the same as the American-style cheese pizza. Try our Margherita Flatbread Pizza!

A deep dish or sheet pan pizza is a fun alternative. A Pan Pizza is made with a thicker crust and extra olive oil to make the crust extra crispy.

Instructions 

Preheat – You want to preheat your oven to 475°. Yes, that’s a high temp, but that’s what will get you that golden crispy crust. Alternatively, grilling pizza is a great option.


Lay the crust – Prepare the dough according to recipe directions. Grease your baking pans or better yet, use pizza screens. Carefully, stretch the dough to fit the pan.


Add your sauce – Spread ½ to ? cup of sauce onto each pizza round.


Don’t forget those cheeses! Then go ahead and sprinkle your cheeses on top.


Bake. Bake 10 – 12 minutes or until crust is crisp and cheese is gooey and golden.


Bonus: Top with chopped fresh parsley if desired.

When it comes to North Indian cuisine, Dal Makhni holds a special place in everyone’s heart. This creamy, buttery lentil curry is a signature dish from Punjab that has found a permanent spot on restaurant menus and festive tables alike. The word makhni literally means buttery, and true to its name, this dal is rich, smooth, and indulgent. If you are a fan of comforting, hearty dishes that warm your soul, then Dal Makhni is something you must try making at home.

Dal Makhni is made primarily from whole black lentils (sabut urad dal) and sometimes a small portion of kidney beans (rajma). Let’s look at the ingredients in detail:


For the dal


1 cup whole black urad dal (sabut urad)


2 tablespoons rajma (kidney beans), optional but adds a nice texture


4 cups water (for boiling)


Salt to taste



For the tempering (tadka)


2 tablespoons oil or ghee

1 medium onion, finely chopped

✅ Step-by-Step Preparation


1️⃣ Soak and cook the lentils


The first and most important step is soaking the lentils. Wash the whole black urad dal and rajma thoroughly in water until the water runs clear. Soak them overnight or for at least 8 hours. This ensures that the lentils become soft and cook evenly.


After soaking, drain and rinse again. Transfer them to a pressure cooker and add 4 cups of water along with some salt. Cook on medium heat for about 15 to 20 minutes or 6 to 7 whistles, until both dal and rajma are soft and easily mashed between your fingers.


2️⃣ Prepare the tempering


Heat oil and butter in a large heavy-bottomed pan. Add cumin seeds and let them splutter. Then add finely chopped onions and sautรฉ on medium heat until they turn golden brown. This step is crucial because properly cooked onions give a rich base to the dal.


Next, add ginger-garlic paste and sautรฉ for a minute or two until the raw smell disappears. Now, add pureed or finely chopped tomatoes along with slit green chilies. Cook this mixture until the oil starts separating from the masala. This indicates that the tomatoes are fully cooked and the flavors have blended well.


Add turmeric powder, red chili powder, and coriander powder to the pan and mix well. Cook for another minute to allow the spices to bloom.


3️⃣ Add dal and simmer


Now, add the cooked dal and rajma to the masala mixture. Mix thoroughly so that all the lentils are coated well with the masala. Add 1 to 2 cups of water depending on the consistency you prefer — some people like their Dal Makhni thick and creamy, while others prefer it slightly runnier.


Bring the mixture to a boil and then reduce the flame to low. Let it simmer for at least 30 to 45 minutes. This slow cooking is the secret to restaurant-style Dal Makhni, as it allows all the flavors to develop fully. Keep stirring occasionally to avoid sticking to the bottom.


4️⃣ Add cream and finish


Once the dal has thickened and looks creamy, add garam masala and crushed kasuri methi. Finally, stir in the fresh cream and cook for another 5 to 10 minutes.


Taste and adjust salt or spices if needed.
